Food Match: Koha Sauvignon Blanc with oysters & mignonette

It's peak summer time for our friends in the USA and the rest of the northern hemisphere, and that means it's time for delicious, easy dishes to go with your perfectly chilled bottle of Koha Sauvignon Blanc (which, p.s. just got a "Best Buy" award from Wine Enthusiast Magazine, so you know it's good!). 

We love nothing more than to pair our Koha Sauv Blanc with fresh, local oysters, and to whip up a simple but delicious mignonette to highlight the natural briny, sweet nature of the oysters and to bring out the fresh, zesty, aromatic and slightly salty characters of our wine. 

Oysters & Mignonette: 

• 1 dozen fresh shucked oysters, served on the half shell 
• 1 shallot
• 2 tablespoons Chardonnay vinegar (or any other good quality red or white wine vinegar)  
• Water (dilute your dressing to taste) 
• White sugar (to taste) 
• Black pepper (to taste)
• Corriander, sliced (optional) 

Let's Make It! 

Peel and then finely dice the shallot. Add to a small bowl, and cover with the vinegar, then add water, sugar, and pepper, and taste. Adjust seasoning if needed. 

Spoon your mignonette over freshly shucked oysters, and serve with a perfectly chilled glass of Koha Sauvignon Blanc. Cheers!
